I spent some quiet time in the greenhouse today, watching how the sunlight moves across the spinach and kale. Even with the short days, a few leaves look surprisingly healthy, while others are showing a bit of frost stress. I didn’t expect spinach to hold up this well without extra heat.

I am starting to eat the stuff that I froze and canned last year.
The juice especially is so good.

Mine are in bloom.
I have two Amaryllis and Hyacinths.
They are beautiful, especially when we're having a snowstorm.

Cold outside - it's time for soup.
While I was looking in the freezer - found tomato juice as well.
Found cabbage, peas, tomatoes and pumpkin.
What are you cooking that you preserved last year?

Mid of January - still 2 feet of snow out-there - anyone dreaming of spring?
I have Amaryllis blooming indoors. So nice to have some colour.
When do you start your seeds indoors?

Around February I'm glad I did.
Did you remember to buy some bulbs this year?

Water-bath canning:
I don't know what to can anymore.
What do you use? Water-canning or pressure cooker?
My water-bath caner holds more jars - but trying to figure out what's low acid - it's making preserving food less fun.

Peat Moss versus Coco Coir -
Coco Coir is imported - Peat Moss is farmed in Canada.
