Why Purple Beans turn green when cooked?

Purple beans contain pigments called anthocyanins.
Bean pods also contain chlorophyll, the green pigment used in photosynthesis. In purple beans, the anthocyanins mask much of the chlorophyll, so the pods appear purple.
