Do your preserving habits change with the seasons?

Maybe early summer is for jam, and late summer for tomato sauce.

I actually as the produce or fruit are ready.
With tomatoes - I freeze those and make tomato sauce when things slow down in the kitchen.

I am starting to eat the stuff that I froze and canned last year.
The juice especially is so good.
