Today I dug up my potatoes - why is it that it's the biggest potatoes that gets pierced.
I now have more potatoes than I can eat in a week.

So I am going to blanch them and freeze them.
One year I pressure can them - this year I going to try to blanch them.
Going to blanch them for 5 minutes and taste test and then decide.

Instructions:
Blanch: 5–7 minutes.
You want them partly cooked but still firm.

Bring a pot of water to a boil.
Add the cut potatoes.
Blanch 5–7 minutes.

Drain and immediately cool them in cold water.
Drain very well.

Pat them dry.
Spread them on a tray and freeze individually.
Once frozen, bag them.

What do you with your potatoes?
The potatoes that escaped my digging fork - I will store them in a cool room.

I blanched my potatoes for 5 minutes.
I guess it depends on the size of the cubes.
I taste tested mine.

Another job done!

What are you freezing?
