I usually just air dry my herbs and freeze them.

Some of my herbs I air dry.
If I am impatient I'll dry some herbs in the microwave.
Garlic, I chopped them up and cover with oil and put in fridge.
Sometimes I will peal all of the garlic and freeze it before it starts to sprout.
